A decent buffet is forgotten within the hour; a cart cooking in front of people gets remembered and photographed. Place carts in different spots: one by the main hall exit, another in the exhibition area and another near the tables. People circulate and sponsors get visitors.

Think about power

Many carts run off a normal 230 V socket, but the cooking carts draw around 2,000 W each. If several go together, ask the venue for separate circuits so the breaker doesn’t trip.

Allergens and diets

Ask for each cart’s ingredient sheet before finalising the menu and mix options: something gluten-free, something vegan and something dairy-free. Two or three well-chosen carts cover almost everyone.
